Homemade, Soft & Chewy ā From My Kitchen
A warm chocolate chip cookie and a lil snacky snack? Yes, please. These are one of my teenagerās favorites, and watching him enjoy something I made brings me so much happiness.
Prep time: 15 minutes
Chill time: 20ā30 minutes, optional
Bake time: 10ā12 minutes per batch at 350°F
Makes: Approximately 24ā30 cookies, depending on size
Ingredients
- 2½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- ½ cup granulated cane sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla bean paste
- 2 cups mini semisweet chocolate chips
Step-by-Step Instructions
1. Prepare the dry ingredients.
Whisk the flour, baking soda, and salt together in a medium bowl. Set aside. Spoon the flour into your measuring cup and level it off instead of packing it down.
2. Cream the butter and sugars.
In a large bowl, beat the softened butter, cane sugar, and brown sugar together until light and fluffy, about 2ā3 minutes. The butter should be soft enough to press gently with your finger, but not melted.
3. Add the eggs and vanilla.
Add the eggs one at a time, mixing after each addition. Add the vanilla bean paste and mix until combined.
4. Combine the wet and dry ingredients.
Gradually add the flour mixture to the butter mixture. Mix just until combinedādonāt overmix. The dough should hold together without being dry or crumbly.
5. Fold in the chocolate chips.
Use a spatula to gently fold in the mini chocolate chips until evenly distributed.
6. Chill the dough, if desired.
Refrigerate for 20ā30 minutes to help reduce spreading.
From my kitchen: I like rolling mine into a log, wrapping it, and refrigerating it so itās easy to portion whenever I need a lil snacky snack.
7. Prepare for baking.
Preheat the oven to 350°F and line a baking sheet with parchment paper. Scoop approximately 1½ā2 tablespoons of dough per cookie, leaving about 2 fingers length between them.
My personal preference is baking at 315°F. If you use that temperature, expect a longer baking time and watch for the lightly golden edges described below.
8. Bake the cookies.
Bake at 350°F for 10ā12 minutes, checking toward the end. The edges should be lightly golden and the centers should look soft but no longer wet. Baking time may vary with cookie size and how cold the dough is.
9. Let them cool.
Leave the cookies on the baking sheet for 5 minutes before transferring them to a wire rack. This helps them firm up so they donāt fall apart or pick up marks from the rack.
šŖ Tips From My Kitchen
- For softer cookies: Watch closely near the end of baking and avoid overbaking.
- For thicker cookies: Chill the dough before baking.
- For chewy cookies: The brown sugar helps give these cookies their moist, chewy texture.
- For storage: Let the cookies cool completely, then keep them in an airtight container at room temperature.
A Little Something From My Kitchen ā¤ļø
Sometimes the simplest things bring the most joy. These cookies are one of my teenagerās favorites, and I love watching him gobble up my homemade snacks.
Weāre in that stage where getting much of an opinion out of him can be a challengeābut when these cookies disappear, I take that as a pretty good review. š
A warm cookie, a little time in the kitchen, and something homemade to share with the people I love. Just a little sweetness in everyday life.
Made with love, from my kitchen to yours. ā¤ļø
